One thing I love the most about bananas is that they never go bad! Even if they are so ripe they are black, you can still make DELICIOUS banana bread with them! This fall, when everyone is ready for freshly baked, straight out of the oven, warm breads….Banana bread will have your taste buds ready to two-step!

Banana Bread

This banana bread is so simple, but boy is it delicious! With a few ingredients, you can bring it together and create one memorable banana bread that will have anyone who tastes it asking you for the recipe. It offers that perfectly sweet and moist texture like your grandma used to make. Top with some butter or a spoonful of jam and you have a perfect breakfast or snack waiting for you. 

This is a really easy homemade banana bread that uses ripe, mashed bananas, spelt flour, a few other ordinary ingredients and then topped with some nuts. Two ingredients I always add into my banana bread is nutmeg and cinnamon. These two spices transform the taste and give it that unique flavor that everyone falls in love with on the first bite! 

Ripe Bananas Give Your Banana Bread More Flavor

One tip I always share that was passed down to me is if you want more rich flavor in your bread, go for ripe bananas. Look for bananas that are brown and speckled or buy fresh ones and toss them in a brown paper bag to help speed the browning process. If you go this route, be sure to check on them each day. You will be amazed at the difference in taste from older bananas compared to yellow ones. Plus older bananas also give your bread a moist texture and, for me, that can’t be beaten! Nuts are always optional. If I have them, I use them, but they’re not a deal breaker. Either way, this bread turns out beautiful every single time. Now I am hungry and need to go slice me off a piece to devour!

Ingredients

  • 3 very ripe bananas 
  • 3 eggs 
  • 6 dates 
  • 1 tsp vanilla 
  • 2 tablespoons coconut oil 
  • 1 cup spelt flour 
  • 1/2 cup oat flour 
  • 1.5 tsp baking powder 
  • 1 tablespoon cinnamon 
  • 1 teaspoon nutmeg 
  • 2 tablespoons chopped walnuts (for topping) 
  • 1 teaspoon cinnamon (for topping) 
  • 1 packet stevia (for topping)

Directions

Preheat the oven to 350 degrees. 

In a blender combine the bananas through to the coconut oil until smooth. 

In a large bowl, combine the flour, baking powder, cinnamon and nutmeg. 

Pour the wet mixture into the dry and mix well, until everything is combined. 

Grease an 8×4 pan and pour the batter into the pan. Use a silicone spatula to spread evenly. 

In a small bowl, mix together the cinnamon and stevia and sprinkle on top of the banana bread. Top with crushed almonds making sure to press them down slightly into the batter. 

Bake 20minutes. Turn the pan and bake another 10 minutes in the oven. 

Remove from oven and let cool full in the tray before removing.
