Football season calls for football food, right?! Well, in this house the Ohio State Buckeyes are my husband’s obsession. When I say obsessed, I mean if they don’t win the game, my husband will be in mourning for the entire week. I don’t know if anyone else has a husband like that or not, but he sure does love his team. He also loves for me to plan out a football party for him. It shows him how much I care about him, to plan a party for something he loves. I may not understand his love for sweaty men running up and down a field trying to put a skinned pig through a hoop while hitting a homerun, but as the chef in this house, I do enjoy making my man smile! I also enjoy whipping up some fantastic food! These BBQ Nachos do the trick. Football, BBQ, and Mexican food all in one? My husband is a happy, happy man!

If you crave nachos, which I am sure you do, this recipe will be a hit like that football player to hits the guy throwing the football (I think he’s called the pitcher)! Although nachos can be prepared an infinite amount of ways, these BBQ nachos are one of my favorites. Topped with BBQ sauce, it definitely puts a new spin on an old favorite!
1 lb. of Ground Beef
1 large Onion, chopped
1 large Green Pepper, diced
2 fat cloves of Garlic, chopped
1 cup of BBQ Sauce
1 tablespoon of Olive Oil
Salt and pepper to taste
1 bag of Tortilla Chips
2 cups of Shredded Cheese (I used a Mexican Blend)
Sliced Scallions and jalapeños as garnish
Sour Cream to drizzling or dipping the nachos (optional)
1. Preheat the oven to 350 degrees F.
2. Heat oil in a large skillet over medium. Add onion and garlic and sauté until the garlic fragrant and the onions are soft.
3. Stir in ground beef, breaking the meat up with a wooden spoon.

Preheat the oven to 350 degrees F.

Stir in ground beef, breaking the meat up with a wooden spoon.
Season with salt and pepper to taste. Cook, stirring often, until the beef is cooked through.
Add barbecue sauce and the green bell peppers to the pan and bring mixture to a simmer. Turn off the heat.
Spread the chips out onto a large baking sheet.
Pour the BBQ beef mixture on top of the chips.
Sprinkle evenly with cheese.
Bake until the cheese is melted and everything is warmed through, about 8 to 10 minutes.
Garnish nachos with sliced scallions and jalapeños. Add dollops of sour cream (optional) and serve warm.
