Blueberry Flower Tarts

Mother’s Day is just around the corner and what better way to make mom happy than to get the kids together and make a special treat! As a mother, I would rather have something handmade or homemade rather than something store-bought. Especially from my kiddos! It means the world to me to see the creations they come up with. I have to admit, over the years my husband has gotten pretty good at working with the kids to come up with some pretty amazing ideas! Sometimes it is a treat they bake or make, other times a special craft. Yet each year they pour their love into a project just for me! So as I was thinking about a recipe for Mother’s Day. I was reminded of a craft that my kids made for me a few years ago.  (side note- there’s a giveaway for Mother’s Day at the bottom of this post so keep scrolling!)

Yes, apparently crafts can also inspire recipes. 😉 The craft was a lovely flower with a picture of each of my kids in the center. Each child made their own. When we PCSed (moved) with the Military the following year from Washington State, I made sure these flowers were packed so they didn’t get broke. I still have them to this day. So when I was thinking about a Mother’s Day recipe to create for you all, I kept going back to that gift. It just meant so much to me!

That’s how this delicious Blueberry Flower Tart recipe came to be! It is super simple. I wanted to keep it simple in case Dad wanted to create the recipe with the kids for mom. I am NOT saying Dad needs a simple recipe LOL! I just know if something is entirely too fancy it might send my husband over the edge. So simple it is. Blueberry Flower Tart

Makes – 18

Ingredients

  • 1 roll of Refrigerated Pie Crust
  • 1 tablespoon of melted Butter

Filling

  • 1 ½ cups of Blueberries
  • ½ cup of Sugar
  • 1 tablespoon of Butter
  • 1 teaspoon of Cornstarch + 2 teaspoon of water
  • 1 teaspoon of Lemon Zest
  • 1 tablespoon of Lemon Juice
  • 2 tablespoon of Water

Garnish (optional)

  • ¼ cup of Whipped Topping
  • Fresh Blueberries and Mint Leaves

Instructions

  1. Preheat oven to 350°F.
  2. Unroll the pie dough onto a well-floured surface. Using a ‘Flower’ cookie cutter, cut out as many flower shapes as possible. Using a rolling-pin, roll out the scraps and continue to cut out ‘flower’ shapes until the dough runs out. We got 18 ‘Flowers’.
  3. Press each ‘flower’ into a greased mini muffin pan. Press the base down into the bottom well and gently fold the petals back around the top of the muffin pan, to crate the ‘flower’ shape.                    
  4. Poke the bottom and sides of the ‘flowers’ with a fork.
  5. Bake for 10 minutes. Keep aside to cool.                        
  6. Meanwhile, make the blueberry pie filling.      
  7. Combine the blueberries, water, sugar, lemon zest and butter in a sauce pan can bring it to a boil over medium-high heat. Reduce heat the heat and simmer for 5 minutes, stirring occasionally, until berries start to break down.      
  8. In a small bowl, mix cornstarch with 2 teaspoons water. Add the slurry to the berry mixture and keep stirring till the mixture thickens. Take it off the heat and stir in the lemon juice. Keep aside to cool.
  9. Once the ‘Flower’ tart shell cools, fill each shell with about 1 tablespoon of the blueberry pie filling.    
  10. Garnish with a dollop of whipped topping, fresh berries and a sliver of mint leaves. (Optional)
