My husband was roommates with a Mexican-American and a Columbian-American while stationed in Germany. All three of these guys enjoyed cooking and my husband learned quite a bit about hispanic cuisine. After we were married and stationed in El Paso, Texas, I took my culinary skills to a new level when I learned to cook authentic Mexican cuisine from scratch.
Anyway, back to my husband. He’s not a chef extraordinaire by any stretch of the imagination. Although he cooks some really good meals really well, he isn’t well-rounded in the kitchen. He also had never used a cast iron skillet prior to our marriage. Actually, he still hasn’t used a cast iron skillet other than while camping. Who knows, maybe he’ll begin using some of my recipes, such as this one, to amaze his camping buddies. However, he also knows that cast iron makes some of the best tasting dishes anyone could ask for.

Cast Iron Chicken Fajita Tostadas
- 1 lb. Chicken Tenders
- 1 Pkg. Fajita Seasoning
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Red Onion
- 1 Pkg. Tostada Shells
- Optional toppings—sour cream, lettuce, avocado, salsa, etc.
Cut the peppers and onion into strips and sprinkle the seasoning onto the chicken.
Put about 3 tablespoons of oil in an iron skillet, add the chicken and veggies and cook over medium heat until chicken is cooked through.
Remove chicken from the skillet and slice into short strips and place back into the skillet.
Mix the chicken into the veggies together. Once mixed, spoon a helping onto a tostada shell.
Top with any toppings of your choice.
Ready to serve!
