Homemade Baked Macaroni and Cheese

My middle son could eat macaroni and cheese for every meal. He gets his love for this cheesy pasta from my husband. The first thing my husband learned to cook was grilled cheese. The second dish my husband learned to cook was mac & cheese. Notice the common factor here? Cheese! His family served mac & cheese every Thanksgiving and Christmas meal. I find it weird, but that’s the tradition he has continued with his sons. 

Homemade baked macaroni and cheese is a total comfort food. This baked macaroni and cheese is truly a family favorite. I think you all will enjoy the cheesy goodness as much we do. This dish is very simple to make, no complicated steps or layering of ingredients, just simple but incredibly savory and delightful. This recipe will complement your dinner perfectly as a side dish or bring a casserole sized dish to your next potluck BBQ gathering. Even the pickiest of eaters will give this a try! 

Many of my husbands fondest childhood memories involve macaroni and cheese. So of course in our marriage it had to become a staple dish for family dinners, get togethers, and holidays. My hubby has passed his love of mac-n-cheese on to my middle son especially. I think he could live on just that alone! lol One of our favorite variations of this dish offers a tangy taste from the sharp cheese and smooth texture. Add in the sour cream, cottage cheese and shredded cheese, this delightful dish packs so much creaminess and flavor that your tastebuds will dance a jig. If you are nervous about adding cottage cheese, don’t knock it until you try it. It helps transform the dish, just like using cottage cheese in baked breakfast casseroles and even in lasagna. It adds flavor that you can’t find from any other ingredient.

If you have block cheese on hand, I suggest grating your own cheese. Store bought shredded cheese doesn’t have the same sharp cheese taste compared to grating your own. There’s nothing wrong with using the store-bought cheese and I use what I have on hand unless I plan ahead. I hope you give this recipe a try to see how scrumptious it really is! 

 

Homemade Baked Macaroni and Cheese Ingredients

  • 1 lb. elbow macaroni noodles
  • 1 cup sour cream
  • 2 cups of small curd cottage cheese
  • ½ cup milk
  • 1 large egg
  • 3-4 cups shredded cheddar cheese
  • ½ tsp of salt
  • ¼ tsp. pepper

Directions

Cook macaroni according to package directions and drain.

While pasta is cooking, mix together egg, milk, cottage cheese, sour cream, salt, and pepper in bowl.

Gently combine the mixture with pasta and add 3 cups of cheddar cheese.

Blend well.

Pour into large casserole dish and sprinkle with remaining cheese.

Bake at 350 degrees, uncovered for 30 mins.
