Instant Pot Chicken and Dumplings

My grandma made the absolute best chicken and dumplings in the world. Although my opinion is very biased, I stand by it nonetheless. The second best chicken and dumplings I’ve ever tasted was made Helen Bowen, a school teacher and member of my childhood church. It goes without saying that I looked forward to every church event. It was a guarantee that her chicken and dumplings would bless us all and I couldn’t wait to dive in!

My youngest son adores chicken and dumplings as much as I did (and still do). Maybe it’s the distinct taste? Or maybe it’s the combination of the different textures? Whatever the reason, chicken and dumplings are a staple in my family.

Unfortunately, it’s rare to find a restaurant that can make a perfect bowl of chicken and dumplings, especially when you’ve grown up eating a perfected dish. Also, as much chicken and dumplings my 8-year-old eats, he’s liable to drain the bank account!

What’s a girl to do owns an Instant Pot and loves to cook? I decided to recreate a piece of my childhood and reinvent a classic recipe with a great modern twist! This Instant Pot Chicken and Dumplings recipe is as wonderfully comforting as my grandma’s and as delicious as our dear friend Helen’s.

Ingredients:

2- 3 chicken breasts

64 oz chicken stock

2 cups flour

1/2 tsp baking powder

2 tbsp cold butter

1/2 milk

1 tsp salt

pepper to taste

Directions:

1) In a large bowl make dumplings by mixing flour, salt, and baking powder. Cut in the butter until the dough becomes slightly crumbly. Mix in the milk and stir until the dough forms a ball.

Roll the dough out on a heavily floured surface until 1/4 inch thick, then use knife or pizza cutter to cut into 2 inch strips.

2) Add chicken and broth to the Instant Pot. Next, add the uncooked dumplings individually making sure they are not stuck together.

3) Close the lid and turn the pressure valve to seal. Cook on high pressure using manual for 4 minutes, do not release the pressure. Just turn off the Instant Pot and let the pressure release naturally.

4) Remove the chicken to shred then mix back in. Stir in desired amount of pepper and serve. The sauce will thicken as it cools.
