Rosemary Roasted Sweet Potatoes and Onions

As I stated in another post, my intent is to continue bringing Paleo dishes for all you fantastic subscribers that have been asking for them. Here is another to tantalize your taste buds. I present to you Paleo Rosemary Roasted Sweet Potatoes and Onions.

Looking for a delicious side dish this Thanksgiving or Christmas? These sweet potatoes aren’t just any side dish, they are my gift to you. These are a delicious, delectable and scrumptious side dish, sprinkled with rosemary and roasted. Is your mouth-watering yet?

My oldest is able to sit down with a big plate of sweet potatoes and inhale them. Then he’ll get up and grab another plate of sweet potatoes and eat them until his little stomach pooches out and creates a lump in his shirt. It’s hilarious! He’s like a little man ready to loosen his belt after gorging himself at the Thanksgiving dinner table. LOL!

These aren’t your ordinary sweet potatoes, though. Granted, they’re paleo sweet potatoes, but how many sweet potato dishes do you know of that combines rosemary and onions, let alone roasted sweet potatoes? You will not be disappointed with the taste nor how easily it is to prepare. And it’s just in time for Thanksgiving!

Ingredients


 4 medium-sized sweet potatoes, peeled and cut into chunks
 2 large Sweet or Yellow Onion, diced
 3 tablespoons of Olive Oil
 1 tablespoon of chopped fresh Rosemary
 1 teaspoon of Smoked Paprika
 Salt and freshly cracked Black Pepper to taste

Instructions

1. Preheat oven to 450F and line a half sheet pan with foil and lightly grease it.
2. In a large bowl, combine potatoes, onion, and add olive oil and toss to coat evenly.
3. Add the chopped rosemary, smoked paprika, salt and pepper and give it a good toss again.
4. Spread the potato mixture on the prepared pan in a single layer.


5. Roast in the oven for 30 minutes, turning the potatoes and onions halfway through the baking time.
6. Remove from oven and sprinkle additional salt and pepper o taste.


Notes

1. The cooking time will depend on the size and quantity of the sweet potatoes. Bothe onions and sweet potato burns easily, so keep an eye, so they don’t burn.
