No Bake Strawberry Cheesecake In A Jar

My cousin, who is like a sister to me, and I have fond memories of my mom’s cheesecake. She would make it for sleepovers, birthdays, and every year she would bring it to us at camp. It is a memory that all three of us talk about to this day. Since we’re taking a trip down memory lane, we still ask my mom, who is now 75, to make her world-famous cheesecake for us!
No bake meals are great for us busy moms, right? I am always trying to take recipes from my childhood and adapt them to my Instant Pot or Air Fryer in order to maintain that same great taste I remember, but also cut down on the cooking time. Not only that, I’m also keeping the integrity of a homemade meal like my mom used to make.
Recently, I discovered meals in a jar. Have you tried meals in a jar yet? This Strawberry Cheesecake in a  Jar is about to leave you shocked! Yep, you read that right – it’s cheesecake in a jar! With Nilla Wafer’s, whipped cream and fresh strawberries, this will make a great dessert for just you or your family. On a side note, if you have kids you will need to increase the serving size or hide this until they go to bed. I have been known to do the latter.  😉

Ingredients:

    • 32 Nilla Wafer cookies
    • 1/4 cup butter, melted
    • 3 tablespoons sugar
    • 1 pint fresh strawberries
    • 2 8 ounce packages cream cheese, softened
    • 4 cups whipped cream (homemade or store-bought)
    • 4 pint jars like pictured below-

Directions

Place the nilla wafers in a heavy-duty zippered bag and crush into small pieces.
Place the pieces into a bowl and combine with the melted butter and sugar.
Divide the crust evenly between the 4 jars and lightly pack down on the bottom of the jar.
Put 4 strawberries aside and wash and dice the remaining berries.
In another bowl, combine the softened cream cheese with the diced strawberries.
Fold in the whipped cream. And pour the mixture into the jars, dividing evenly between all 4 jars.
Cut the 4 strawberries in half and place on top of the jars for garnish. Place the jars in the fridge for at least 2 hours before serving. Can be made the night before.
