Triple Berry Oat Parfait

I love it when I come up with a recipe that is not only healthy and tastes great, but looks like something you’d find from a 5-star restaurant! Six years ago I lost 130 pounds! In order to lose the weight and maintain my current weight, I had to make some lifestyle changes. What I ate for breakfast was one of them. I am thrilled to share a new way to do breakfast! If you are tired of the same old bowl of cereal, oatmeal, or toast, here is a healthier option.

This Parfait may very well be your next favorite! As a healthy alternative to store-bought yogurt or even my normal tried and true Instant Pot yogurt, this overnight recipe will leave you feeling renewed and refreshed in the morning with its piles of berries and hint of chia seeds!

I love it when healthy becomes so easy. I also live in a house with kids that love oats they love yogurt. This recipe is also kid approved!

Ingredients

  • 1 cup oats (not instant)
  • 1.5 cups almond milk
  • 3 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 6 strawberries
  • 1/2 cup raspberries
  • 1/3 cup blueberries
  • 1/2 can full fall coconut milk, chilled in the fridge overnight
  • 4 drops liquid stevia

Directions

Make the oats by combining the first four ingredients in a large bowl. Mix well and let sit overnight (or at least four hours) in the fridge.

The next morning, prep your fruit by slicing the strawberries.

If you’ve placed the can of coconut milk in the fridge, it should be hard and solid when you open it.

Place the coconut milk into a bowl and add the stevia. Using an electric mixer whip the coconut milk until it’s light, fluffy and resembles whip cream.

Begin layering your parfait with oats, berries and coconut whip.

Enjoy!
