Three Bean Salad

Ingredients

  • 1 Can black eyes peas (19oz)
  • 1 Can chickpeas (28 oz)
  • 1 Orange pepper, diced
  • 2 Stalks celery, chopped
  • 1 Cup Green beans, cut into 1 inch long pieces
  • 1 Small red onion, diced (roughly 1/2 cup)
  • 1 Clove garlic, crushed
  • 1/4 Cup apple cider vinegar
  • 3 TBSP olive oil
  • 1/2 a lemon, juiced
  • 2 TBSP tablespoons honey

Instructions

  1. In a large bowl, mix together the beans.

    Prep your veggies and add them to the beans. Mix well.

    In a small bowl combine the dressing ingredients. Whisk.

    Pour the dressing over the bean salad and mix to combine.

    Refrigerate for 12-24 hours until ready to serve.

    Makes 8 cups.
